The image of Bourgogne as an ocean of vineyards has not been denied. The landscapes that unfold are long stretches of monotonous vineyards, broken by small bucolic hedgerows. During the pruning season, the vines are crowded with small teams who hover around the fireplaces to burn the wood. We were able to visit some great estates that we'll only know by name, as we couldn't afford to buy the bottles! But you know us, we also pushed open the doors of some of the smaller estates to find out what goes on inside the heads of these slightly crazy winemakers who express themselves in their work in an almost poetic way. From the north to the south of Bourgogne, we were touched by a profession struggling to find a balance between productivity and quality. Faced with the degeneration of the vineyards, the many vines that have been replaced bear witness to the choices made in the past and each offers an opportunity to take a new direction!
