In Champagne, we thought we'd lost our way! The long stretches of rapeseed only gave us a glimpse of the vines at the last minute, so with a sigh of relief, we discovered a new piece of this patchwork between the Côte des Blancs, up to the Montagne de Reims.

The long stretches of rapeseed only gave us a glimpse of the vines at the last minute, so with a sigh of relief, we discovered a new piece of this patchwork between the Côte des Blancs, up to the Montagne de Reims. We entered a cellar with a door in the shape of a ship's hull, tasted bread made on the domaine, fresh from the oven, examined a glass-enclosed soil sample... and a huge silica crystal. In the midst of this whirlwind, we took the time to discover an original production process: because to make good Champagne, you need to be patient!
